Yellow Curry Bowl | Simple & Gluten Free

The moment we have been waiting for! Simple yellow curry bowl! Serve this savory, aromatic dish with baked tofu, steamed broccoli and my favorite gluten free rice noodles by Lotus Foods. Enjoy the magical bites of sweet juicy pineapple and crisp water chestnuts! This bowl is truly addicting! It’s one of my all time favorites to make. This recipe serves two very hungry people.

Ingredients:

  • 1 cup of canned water chestnuts. Drained & rinsed
  • 1 cup of fresh or frozen pineapple
  • 1 block of extra firm tofu
  • 1 cup of steamed broccoli
  • 1 pack of Lotus Foods white rice noodles

Curry Sauce ingredients:

  • 1 can of coconut milk
  • 2 tbsp of curry powder
  • 2 tbsp of arrow root powder
  • 1/2 tbsp of white onion powder
  • 1/2 cup of water
  • 1/2 tbsp of braggs liquid aminos (gluten free soy sauce)

Instructions:

  • Preheat oven at 375 degrees F. Line a baking sheet with parchment paper.
  • Pat dry tofu block using paper towel to absorb a bit of the water. Cut into cubes, and spread evenly across baking sheet. Bake for about 40 minutes, or until the edges of the block become a light golden brown.
  • In a large sauce pan, place all ingredients for curry sauce and turn heat on high. Bring to a light boil, while whisking occasionally. Once sauce thickens a bit, turn heat to simmer.
  • Add pineapple, steamed broccoli and water chestnuts. Mix thoroughly.
  • In a large pot, bring 4 quartz of water to a boil. Add rice noodles and turn heat to medium low. Cook for about 5 minutes until tender. Drain.
  • Place all ingredients in a serving bowl, and top with baked tofu. Enjoy!
