Vegan Tangy Yogurt Dressing Recipe for Rainbow Salad | Dairy free, Gluten Free, Oil Free
Try my new tangy yogurt salad dressing recipe! It's oil free, gluten free, and vegan! You can even use it as a veggie dip or spread.
To make a rainbow salad, choose 3 or more different color fruits or vegetables and toss them together on a bed of lettuce. I used carrots, red cabbage, yellow bell pepper, peas, and cilantro. Tip: for sweet bell peppers, choose the ones with 4 bumps on the bottom rather than 3. They are much more sweeter!
Recipe for the Yogurt Dressing
- Plain Vegan Yogurt - 3 heaping tbsps. I used Kite Hill almond based plain yogurt. You can also use So Delicious brand which is coconut based. Just be sure it is plain, and not flavored!
- Onion powder - 1/4 tsp
- Ginger powder - a tiny pinch
- Dried Dill - 1/4 tsp
- Lemon Juice - 1 tbsp
Mix all ingredients together and drizzle over your beautiful rainbow salad! Enjoy!
