I went vegetarian at the age of 7. I never had a Sloppy Joe in my life, but I always remember my family having so much fun on sloppy Joe nights. While they were busy making a mess and licking their fingers, I rolled peas around on my plate. I decided to have a little fun and revisit this memory by creating my own version. Grab your napkins! I introduce to you the new Sloppy Jim! They’re fun, messy and simple! They make a great lunch since they’re so simple to make. Enjoy!

Serves 2 people

Ingredients:

  • 1 & 1/2 cups of cooked lentils
  • 4 pieces of gluten free bread. I use Little Northern Bake House found at Whole Foods.
  • Ketchup to taste
  • Mustard to taste

Instructions:

  • Once lentils have been cooked, drain them well.
  • Toast the bread
  • Pile on the lentils!
  • Serve with ketchup and mustard! enjoy!
