Sloppy Jims | Vegan Sloppy Joes | Gluten Free & Oil Free
I went vegetarian at the age of 7. I never had a Sloppy Joe in my life, but I always remember my family having so much fun on sloppy Joe nights. While they were busy making a mess and licking their fingers, I rolled peas around on my plate. I decided to have a little fun and revisit this memory by creating my own version. Grab your napkins! I introduce to you the new Sloppy Jim! They’re fun, messy and simple! They make a great lunch since they’re so simple to make. Enjoy!
Serves 2 people
Ingredients:
- 1 & 1/2 cups of cooked lentils
- 4 pieces of gluten free bread. I use Little Northern Bake House found at Whole Foods.
- Ketchup to taste
- Mustard to taste
Instructions:
- Once lentils have been cooked, drain them well.
- Toast the bread
- Pile on the lentils!
- Serve with ketchup and mustard! enjoy!
