Bamboo & Veggie Soup | Gluten Free | Oil Free
Bamboo & Veggie Soup
This soup has everything you need to fuel you up and satisfy your taste buds! Serves 3 people.
- 2 cups of vegetable broth
- 1 cup of water
- 1 can of bamboo shoots
- 3/4ths cup of cooked lentils
- 1 cob of organic sweet corn, or 1/2 cup of frozen corn
- 3 stalks of celery – chopped
- Juice of 1 whole lemon
- 3 large leafs of chard – chopped
- 1 tsp of black pepper
- 1 tbsp of dill
- Optional 1 tbsp of braggs liquid aminos (gluten free soy sauce)
- In a large pot add all ingredients.
- Turn heat on medium and cover for 10 minutes.
- Uncover and stir. Turn heat to simmer for 15 minutes.
