3 Ingredient Vegan Cheese for Nachos | Nut Free | Oil Free | Gluten Free!

3 Ingredient Vegan Cheese for Nachos

Bold, sticky, creamy, velvety, tangy and rich! I decided to create my own simple ingredient cheese to save money and consume cleaner foods. The closer I am to my food, the better it digests for me.

Ingredients to make a large portion for 5,

1. 1/2 Carrots

2. 8 Peeled Potatoes

3. 1/2 Cup Fresh Squeezed Lemon (or to taste)


4. 1/2 TBSP Himalayan Salt

5. 1/2 TBSP Curry Powder

Why optional? Because I made this cheese without those and it tasted wonderful! But because I was having so much fun playing around with this, I wanted to add another 3 ingredients to see how crazy I could make this! You could also add some fresh garlic or add some herbs.

How to:

1. Steam potatoes and carrots together until soft

2. Blend them up using a high speed blender or food processor. (I used a Nutribullet)

3. Add lemon and any other ingredients you’d like!

No nuts, no oil, no dry spices or flours are needed for this. It’s very simple. I believe our bodies like to work with foods that are closer to the earth. There are so many fun ways to work with whole plant based foods.
